Chicken Breasts Alfredo
4-6 boneless chicken breasts flour 5 eggs 1 cup grated parmesan cheese (the green can kind!) 1/2 tsp salt 1/4 cup parsley 4 Tbsp. oil 4 Tbsp. butter bread crumbs
shredded mozzarella cheese
Sauce: 2 cups cream 1 cup parmesan 1/3 cup water 1/2 cup butter 1/3 cup parsley
Coat breasts with flour. Mix eggs, cheese, water, salt, and parsley. Dip chicken in mix and then coat with bread crumbs.
Heat butter and oil in skillet. Cook until brown on each side. Place in baking pan and bake at 350 until done (depending on thickness of breasts-30 minutes?) Sauce--Heat all ingredients in saucepan , cook and stir 5 minutes. Pour over chicken and top with mozzarella cheese and bake 10-15 mins more till cheese melts.
