This is a delicious lasagna that even my kids loved when they were young, so they got lots of veggies in them from it! It has a white sauce instead of red. I'm sure you could substitute other veggies to your liking but this is the way I make it: lasagna 1 box, or fresh sheets 1 16 oz can diced carrots 10 oz. frozen broccoli (cooked and drained) 10 oz. frozen chopped spinach (cooked and drained) 15 oz ricotta cheese 1 egg 7 tbsp. butter 1/2 tsp oregano 1/4 cup flour 1/4 tsp salt 1/4 cup grated parmesan cheese 2 1/2 cups milk 16 oz shredded mozzarella
In a skillet, melt 4T of the butter with the oregano and salt. Add diced carrots and the broccoli Cook about 3 minutes.
Add the spinach. Cook 1 minute. Remove from heat.
In bowl mix: ricotta and egg.
In skillet, melt 3T butter, stir in 1/4 cup flour and the salt, and the milk. Stir till thick. Remove from heat and stir in parmesan cheese.
Layer in a pan: lasagna sheet (or noodles) (cooked if required, or the no-boil type) , ricotta mix, vegetables.Top with white sauce and a sprinkle of mozzarella. Repeat layers.
Bake at 350 for approx 45 minutes.
