Taco Salad
1 head of lettuce, chopped
3 or 4 tomatoes, diced
1 lb. of shredded mild or medium cheddar cheese
1 small can of kidney beans
1 medium onion
1 pre-roasted chicken (shredded)
1 15 oz. bag of nacho flavored tortilla chips
1 small jar of Kraft mayonnaise
1 small can of mild enchilada sauce
Sautee chopped onion.
Mix mayonnaise and enchilada sauce (this is the dressing)
Crush tortilla chips
Sautee kidney beans until they begin to crack.
Combine all ingredients in one very large bowl (or wash tub…) and enjoy.
This is best if served while the meat and kidney beans are still warm – but not necessary. Do not assemble much before eating as the lettuce will wilt and the chips will get soggy.
This can also be made with hamburger instead of chicken
